Amazake is a gently sweet naturally derived substance made from just water, organic brown rice and a pinch of salt. These undergo true fermenting alchemy to produce this thick, creamy, dairy free traditional Japanese dessert with naturally formed simple sugars. Dexter really loved good old rice pudding before going dairy free so I wanted to find an easy pudding type substitute for those school nights when you need something gluten and dairy free quick! Amazake is great for a hot or cold dessert or breakfast. Traditionally diluted with hot water, sieved and drunk as a comforting winter warmer, I've added it to smoothies for a bit of extra filling up, it's really versatile - just bung in some suitable fruit and its a great child friendly pud. Because the sugars produced by the fermentation process are glucose and oligosaccharides, I'm assuming this is not low FODMAP, although oligosaccharides are great for your gut flora of you're not on the FOPMAP diet.
