Porcini Polenta

Polenta is a great gluten free dinner option, this Porcini Polenta from Cooks & Co uses traditional Italian cornmeal combined with porcini mushrooms, herbs and garlic.  You can serve it as a an alternative to pasta, rice or potato or fry the cooked polenta into a little patty for a healthy snack.

Items to Add: 1 tbsp extra virgin olive oil, 1/2 tsp salt, finely grated Parmesan cheese (to taste).

Cooking Instructions: Serves 2. Bring 750ml salted water to boil in a saucepan. Add the pack contents and reduce to a simmer for 10 minutes, stirring frequently. Stir in the olive oil and serve with grated Parmesan cheese. Alternatively, pour into a tray and leave to set. Slice and fry for 3-4 minutes each side.

Ingredients: Pre-cooked maize meal (95%), dehydrated porcini mushrooms (Boletus Edulis) (3%), dehydrated carrots, dried chives, dried garlic.
